- For the waffles
- ½ cup soft butter (scant)
- 1 tsp salt
- 3 eggs
- 1 ¼ cups all-purpose flour
- 3 Tbsps Poppy seeds
- 1 tsp Baking powder
- ⅞ cup milk
- 1 small carrot (finely grated)
- 4 Tbsps fresh Fresh herbs (e. g. dill, parsley, cress, chopped)
- butter (for the waffle iron)
- For the dip
- ⅓ cup Quark
- ⅓ cup Yogurt
- 1 tsp Wasabi
- 2 Tbsps fresh Fresh herbs (e. g. dill, parsley, cress; chopped)
- 5 ozs cooked Crabmeat (chopped)
- lemon juice

Preparation steps

Mix together the butter, salt and eggs until creamy. Mix together the flour, poppy seeds and the baking powder and add to the wet ingredients alternating between the milk and the flour mixture. Stir in the grated carrot and the herbs. Cover and leave to rest for around 15 minutes.

To make the dip, mix together the quark, yogurt, wasabi and herbs. Add the crab meat and season with salt, ground black pepper and lemon juice. Place in the fridge until serving.

Grease the waffle iron with some butter and place a little batter (a small ladleful) in the middle. Bake the waffles and serve with the dip. Garnish with lemon wedges.
