400 grams Salmon (ready to cook)
200 grams Daikon radish
1 Cucumber
1 bunch cilantro
5 Tbsps Rice
light Fish sauce
1 chili pepper
2 Tbsps Lime juice
1 tsp brown sugar
1 garlic clove

Preparation steps

1.

Toast rice until golden-brown in a dry pan. Let cool and grind into to a fine powder.

2.

Rinse, trim and cut cucumber in half lengthwise. Scrape out seeds and cut or shave into very thin strips.

3.

Peel radish peel and cut or shave into thin strips.

4.

Strip cilantro leaves from stems.

5.

Finely chop chile and garlic and mix with lime juice, sugar and fish sauce.

6.

Rinse salmon, pat dry and cut into very thin slices. Arrange salmon on a platter. Top with cucumber and radish slices and sprinkle with cilantro. Drizzle with marinade and serve sprinkled with rice powder.
