1 shallot (finely chopped)
1 red chili pepper (finely chopped)
1 clove garlic cloves (finely chopped)
1 carrot (grated)
1 ¾ ozs Bean sprout
2 dried shiitake mushrooms (soaked in warm water for 30 minutes)
1 ¾ ozs Rice noodles (soaked in hot water for 5 minutes)
7 ozs ground Pork
4 ½ ozs raw, peeled Shrimp tail (chopped)
8 Spring roll dough sheet ((20 x 20 cm|10 inch x 10 inch)
1 egg white (beaten)
Oil (for deep frying)
To garnish
2 sprigs cilantro
2 sprigs mint
½ cup Nuoc Cham sauce

Preparation steps

1.
Mix together the shallots, chilli, garlic, carrot and bean sprouts.
2.
Drain the mushrooms and chop finely. Drain the noodles, rinse in cold water, drain and chop.
3.
Mix the mushrooms, noodles and pork with the shallot mixture and stir in the shrimps.
4.
Lay the spring roll sheets out and divide the filling between the sheets, placing it in the centre.
5.
Brush the edges with egg white and roll up.
6.
Heat the oil in a deep pan and fry the spring rolls in batches for 2-3 minutes until golden brown and crisp. Drain on kitchen paper.
7.
Garnish with herbs and serve with Nuoc Cham sauce.

Nuoc Cham Sauce is a common Vietnamese Dipping Sauce made with lime juice, or occasionally vinegar, fish sauce, sugar, and water. It's easy to make but you can substitute any sweet and sour dipping sauce for these eggrolls.
 
If I don't have the Nuoc Cham sauce, what other sauce can I use instead?
