You can susbtitute the noodles with zucchini noodles for a lower calorie, lower carb variation.

- 3 cups Broccoli (crowns)
- 2 cups sugar Snap pea
- 16 ozs Fettuccine (cooked)
- 1 red pepper (deseeded and cut into strips)
- ½ cup Pumpkin seed
- ⅞ cup
- 2 Tbsps chopped parsley
- salt (to taste)
- peppers (to taste)

Preparation steps

Add the broccoli crowns and snap peas to a large pan of boiling water and cook for 4 minutes. Strain the vegetables and rinse under cold water until cool.

In a large bowl mix the cooked fettuccini with the broccoli, peas, pepper and pumpkin seeds. Add the dressing and parsley and toss until combined. Add salt and pepper to taste.

Chill for 1 hour before serving.
