4 ripe Tomatoes (rinsed; trimmed and sliced)
1 medium Zucchini (rinsed; trimmed and sliced)
2 balls Mozzarella (drained and sliced)
1 Baguette (sliced)
cup cream cheese (softened)
salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps good-quality olive oil (plus extra for baking sheet)
sweet paprika (for sprinkling)
12 fresh Basil
12 wooden Toothpicks

Preparation steps

Preheat oven to 400ºF.

Spread cream cheese over one side of each baguette slice. Top with a tomato slice, season to taste with salt and pepper and drizzle lightly with olive oil. Add a zucchini slice and season with salt to taste, top with sliced mozzarella and sprinkle with sweet paprika. Transfer stacked baguette slices to a baking sheet lightly brushed with olive oil. Bake in preheated oven until the mozzarella begins to melt, about 4 to 5 minutes.

Remove from oven, secure with wooden picks and garnish each baguette with a basil leaf. Serve.
