This wrap is extremely well rounded, containing carbs, fats, proteins, and essential nutrients. This is a great meal to take on the go, whether it is to work, on a road trip, or on a picnic. 

You can add some grilled chicken, steak, or tofu to these to add some more proteins. 

Ingredients

1 organic lemon
3 ozs grainy Cottage cheese
salt
freshly ground peppers
2 Tomatoes
1 carrot
1 yellow Bell pepper
2 scallions
½ bunch Basil
4 leaves green Lettuce
2 Tbsps Pumpkin seed
2 Herb Tortillas (premade)

Preparation steps

1.

Mix lemon zest with cottage cheese and season with salt and pepper.

2.

Rinse and halve tomatoes, remove seeds and dice into small pieces. Peel carrot and grate coarsely, mix with a little lemon juice.

3.

Rinse and quarter bell pepper, remove seeds and ribs, cut into cubes. Rinse and dry scallions, cut into rings. Rinse and shake dry basil, pluck off leaves and cut into strips. 

4.

Combine cream cheese, tomatoes, carrot, pepper, basil and scallions. Season with lemon juice, salt and pepper. 

5.

Toast pumpkin seeds until golden and add to cream cheese mixture. Warm tortilla wraps and layer with lettuce leaves. Spread with cottage cheese mixture and wrap well. Serve.
