- 3 Tbsps vegetable oil

Preparation steps

Rinse, halve and remove seeds from tomatoes. Cut tomatoes into strips. Rinse and halve peppers, remove seeds and ribs and cut into strips. Peel, halve and finely dice onion. Cut ham into very small cubes. Heat the oil in an ovenproof pan. In succession, sauté vegetables. Season with salt and pepper and mix in herbs.

Stir flour with milk until smooth. Beat eggs and stir into the flour mixture. Pour egg mixture evenly over the vegetables. Cook over medium heat until eggs are beginning to set, about 10 minutes. Transfer pan to an oven preheated to 170°C (approximately 350°F). Turn oven to broil and bake, watching carefully, about 5 minutes. Serve frittata garnished with tomato and basil.
