- 4 blue purple potatoes
- 6 thick carrots
- 2 Tbsps sunflower oil
- 4 balsamic vinegar
- 1 parsley
Preparation steps

Scrub the potatoes and carrots, and cook until soft in a pot with a steamer insert. Peel and cut potatoes and carrots into precise cubes (1.5 cm thick) (approximately 1/2 inch).

Mix oil, vinegar and herbs into a dressing and drizzle on the plate. Arrange the potato and carrot cubes in a chessboard pattern and serve garnished as desired with herbs and potato and carrot spirals.
