- 6 small Fennel bulb
- ½ cup butter
- 1 onion (finely diced)
- 1 clove garlic cloves (minced)
- 2 ½ cups button Mushrooms (thinly sliced)
- 2 cups shiitake mushrooms (thinly sliced)
- 7 Tbsps breadcrumbs
- salt
- peppers
- 4 sprigs thyme
- 2 bay leaves
- ⅞ cup vegetable stock
- fennel fronds (to garnish)

Preparation steps
1.
Preheat the oven to 200°C | 400F | gas 6.

Wash the fennel bulbs, cut off the leaves and set aside. Cook the fennel bulbs in plenty of boiling water for 5 minutes, then take out of the pan and drain.
3.
Heat 1 tbsp butter in a frying pan and sweat the onion and garlic until soft. Mix the mushrooms, onion and garlic with the butter and breadcrumbs. Season to taste with salt and pepper and add a little thyme.
4.
Pile the mixture on the fennel halves and put into a baking dish. Add the stock and the bay leaves and bake in the preheated oven for about 15 minutes.
5.
Arrange on a platter and serve garnished with fennel leaves.
