- For the crust
- ¾ cup Quinoa
- ¼ cup water
- ½ tsp salt
- 1 clove garlic cloves (chopped)
- ½ tsp Black pepper
- 2 tsps Italian seasoning
- ¼ cup grated dairy-free cheese
- For the pizza topping
- 1 cup Tomato sauce
- 1 cup fresh Spinach (washed and dried)
- ½ cup Pine nuts
- 1 cup cashew cheese
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Soak the quinoa in a bowl with enough water to cover all the grains. Stir and cover and soak for 8 hours.
2.
Preheat oven to 450° F/ 230° C. Drain the quinoa with a sieve.
3.
Blend quinoa, water, salt, garlic, pepper, Italian seasoning and cheese in a blender until smooth. The consistency will be similar to pancake batter.
4.
Line a baking sheet (or sheets) with parchment paper and pour batter to form three crusts.
5.
Bake for 15 - 20 minutes, until nicely browned. Remove from oven and flip the crusts. Return to oven and bake for an additional 10 minutes or until nicely browned.
6.
Divide and spread pizza sauce evenly over the crusts. Sprinkle equal portions of the spinach, pine nuts and cheese on top. Season with salt and pepper.
7.
Broil the pizza in the oven for 5 minutes. Serve!
