Preparation steps

1.

Rinse the potatoes and cook in boiling salt water for 20-25 minutes. Drain, peel and, once cooled, cut the potatoes into slices. Peel and finely chop the onion. Rinse the chanterelle and cut into smaller pieces, if necessary. Saute the potatoes, chanterelle and onion in hot margarine and oil for about 5 minutes. Season with salt and pepper.

2.

Puree the tofu and oat cream until smooth. Fold in half of the parsley and season with salt and pepper.

3.

Roll out the puff pastry. Line the pans with the pastry, forming an edge. Mix the mushrooms and tofu cream. Arrange the potato slices on the pastry and pour in the mushroom cream. Bake for about 20 minutes (40 minutes for a larger pan). Remove from the oven and serve.
