- 2 tsps lemon juice
- 400 grams Silken tofu
- 200 milliliters Soy cream
- ½ tsp Agar
- 1 Vanilla bean
- 40 grams white cane sugar (+ 4 tablespoons for topping)
- Vanilla bean (for garnish)

Preparation steps
1.
Peel the banana and slice. Puree the banana with the lemon juice, tofu, soy cream, agar, vanilla and turbinado sugar in a blender.
2.
Pour the puree into a pot, then bring to boil and cook for 1-2 minutes while stirring vigorously. Distribute into 4 bowls and chill in the refrigerator for 2 hours.
3.
Sprinkle the creams with the remaining sugar and caramelize with a torch until golden brown. Garnish with vanilla pods.
