1.333 cups milk
1 Vanilla bean (cut in half lengthways)
1 Tbsp Coffee bean
cup cream
6 egg yolks
¼ cup sugar
brown sugar (for the caramel)

Preparation steps

1.
Heat the oven to its lowest temperature.
2.
Place the milk, vanilla pod and coffee beans in a pot and bring to the boil. Remove from the heat, cover and leave to steep for 15 minutes. Sieve the mixture and return to the pot along with the cream, bring to the boil again.
3.
Mix together the egg yolks and sugar until creamy and gradually stir in the hot coffee-vanilla milk. Pour into ramekins or a large bowl and place in a baking dish with a high edge. Fill the baking dish with hot water so that 2/3 of the bowl is standing in the water.
4.
Place in the oven 35-40 minutes then remove, leave to cool and then chill in the fridge.
5.
Before serving sprinkle the cream with brown sugar and grill for a few minutes so that the surface caramelises.
