Preparation steps

Cut the vanilla bean half lengthwise with a sharp knife and scrape out the seeds. Mix with the sugar. Separate the eggs and save the whites for another use. Mix the flour with the softened butter, egg yolks, ground almonds and 70 grams (approximately 3 tablespoons) of vanilla sugar. Quickly knead to make a smooth dough. Form the dough into a ball, wrap in foil and refrigerate for at least 30 minutes.

Shape the dough into rolls (3 cm diameter) (approximately 1 inch diameter) and slice into 2 cm (approximately 3/4 inch) thick slices. Form into crescents and place on a lined baking tray. Bake on the middle rack of a preheated oven at 175°C (convection 160°C; gas mark 2-3) (approximately 350°F, convection 325°F) until golden brown, about 10 minutes.

Mix the remaining vanilla sugar with powdered sugar in a deep dish. Carefully remove the cookies from the baking paper and roll in the sugar while still warm. Allow to cool and serve.
