1 Small skillet, 1 Baking sheet, 1 Bowl, 1 Plate, 1 Cutting board, 1 Small knife, 1 Fine-mesh sieve, 1 Whisk, 1 Parchment paper, 1 Oven rack, 1 Plastic wrap

Preparation steps

Toast ground almonds and hazelnuts in a small dry pan until light brown. Let cool on a plate.

Halve vanilla bean lengthwise and scrape out one side of the seeds with the back of a knife. In a bowl, combine butter, 80 grams (approximately 1/2 cup) powdered sugar, the scraped vanilla seeds, vanilla sugar and 1 pinch of salt. Mix until smooth.

Add egg yolks and toasted ground nuts. Knead briefly until dough is pliable. Roll dough into three logs, each about 3 cm (approximately 1 inch) in diameter. Wrap in plastic wrap and refrigerate until firm, about 2 hours.

Slice logs into 1.5 cm (approximately 1/2-inch) rounds. Place on a baking sheet lined with parchment paper and form into crescent shapes. Refrigerate cookies for another 30 minutes.

Bake on middle rack of preheated oven at 180°C (fan 160°C) (approximately 350° F) until golden brown, 14-15 minutes. Scrape seeds from remaining vanilla-bean half and mix seeds with the remaining powdered sugar.

When cookies come out of the oven, immediately coat them with the vanilla-powdered sugar. Let cool on a cooling rack, then dust with remaining powdered sugar.
