1 cup unsalted butter (softened)
1 ½ cups granulated sugar
1 large egg
2 tsps pure vanilla extract
2 ¾ cups all-purpose flour
2 tsps Baking powder
1 tsp salt
15 Popsicle stick

1 ½ cups powdered sugar
2 ½ Tbsps Shortening
1 Tbsp milk
½ tsp pure vanilla extract
Food coloring

Preparation steps

In a large bowl, cream butter and sugar together until light and fluffy. Using an electric mixer, beat in the egg and vanilla extract.

In a separate bowl. sift flour, baking powder, and salt together. Add the dry ingredients to the butter mixture in three separate additions, mixing well after each addition.

Using your hands, knead dough to form a smooth dough. Cover with plastic wrap and chill for 2 hours.

Position oven rack in the center of the oven. Preheat oven to 375º F. Line baking sheets with parchment paper.

On a lightly floured work surface, roll out dough to a thickness of 1/2-inch. Cut out dough using a round 2 1/2-inch cookie cutter. cut. Carefully, insert a wooden popsicle stick into each cookie and transfer to prepared baking sheet, leaving at least 1 1/2 to 2-inches between cookies.

Bake for 10 to 12 minutes, or until light golden brown.. Cool on the baking sheet for 5 minutes and transfer to a wire rack to cool completely prior to decorating.

In a large bowl, cream confectioners' sugar and shortening together until smooth and creamy. Slowly add in the milk 1/2 tablespoon at a time. Using an electric mixer, beat mixture until icing is smooth and stiff. Add vanilla, beating to blend.

Divide icing into smaller portions and add food coloring if desired. Decorate each cookie with icing and sprinkle with decorative sugar. Serve.
