2 slices Wholemeal Bread
2 slices white Bread
¼ cup cream cheese
3 ½ ozs cherry Tomatoes
7 ozs Tuna tinned (in its own juice)
1 Tbsp olive oil
1 Cucumber (sliced)

Preparation steps

1.
Spread the slices of bread with cream cheese.
2.
Blanche the tomatoes quickly in salt water, quench with cold water and drain.
3.
Drain the tuna well and mix it with the tomatoes and olive oil. Season with salt and pepper.
4.
Arrange half the cucumber slices on the wholemeal bread and add the tuna salad. Cover with another layer of cucumber.
5.
Place the other slice of bread on top and cut in half diagonally.
