8 sheets gelatin
2 ½ cups clear Apple juice
2 Tbsps lemon juice
2 Tbsps sugar
red and green Food coloring

Preparation steps

1.
Soften the gelatine in cold water for around 10 minutes.
2.
Divide the apple juice between two pots and add 1 tbsp lemon juice and 1 tbsp sugar to each pot. Heat gently and stir until the sugar has dissolved.
3.
Add green food colouring to one pot and red to the other. Wring out the gelatine and add 4 sheets to each pot. Allow to dissolve and then remove from the heat.
4.
Chill in the fridge until the mixture begins to gel but isn't yet firm. Transfer to shot glasses, alternating between red and green and chill for around 2 hours until set. Serve garnished with biscuits.
