- 200 grams unsalted, shelled Pistachio
- 250 grams Rice flour
- 1 kilogram sugar
- 2 generous pinches Lemon salt

Preparation steps

Coarsely chop pistachios. Line a square shaped baking dish (such as a small baking pan or glass dish) with foil. Mix rice flour and sugar in a pot, add 1.2 liters (approximately 40 1/2 ounces) of water and bring to a boil, stirring occasionally. Add lemon salt and chopped pistachios and continue cooking, while stirring, until the mixture has a malleable consistency.

To check the consistency, remove a teaspoon of the mixture, put in ice-cold water and form a ball in the water using your fingers. Remove ball from water, if the ball still has an elastic consistency then the consistency is correct. Transfer the mixture to the lined pan and let rest in a cold place. Cut into 1.5 cm (approximately 1/2 inch) wide squares.
