400 grams turkey breasts
2 Tbsps green Curry paste
150 milliliters milk
150 milliliters Chicken broth
150 green Beans (cleaned and halved)
1 small Eggplant (small cubes)
2 Tbsps soy sauce
1 tsp sugar
2 tsps Fish sauce
1 Lime (Juice and zest)
3 Tbsps chopped cilantro
1 Red chili pepper (chopped)
250 grams Thai- Rice

Preparation steps

Cook the rice according to package instructions.

Cut the turkey into strips. Heat the curry paste and milk in a pan, add the broth and turkey strips and cook for 5 minutes. Add in the beans, eggplant, soy sauce, sugar and fish sauce and cook another 8 minutes. Stir and season to taste. Serve garnished with chili peppers, lime juice and zest and cilantro.
