8 ozs boneless, skinless turkey breasts (or chicken breast)
salt (to taste)
freshly ground Black pepper (to taste)
1 tsp dried thyme
1 Tbsp sunflower oil
4 slices Bread (such as rye, multigrain, or your favorite)
3 Tbsps olive oil (divided)
1 Cucumber (peeled)
1 handful fresh Arugula (rinsed and dried)
1 ripe Tomato (rinsed and sliced)

Preparation steps

1.
Rinse the turkey or chicken under cold running water and pat completely dry with paper towels. Season to taste on both sides with salt, pepper and thyme.

Heat the sunflower oil in a skillet set over medium heat. Cook the turkey or chicken for 3 to 4 minutes per side depending on thickness, or until cooked through. Set aside.

Meanwhile, toast both sides of the bread on the grill. Remove and drizzle with half of the olive oil.
4.
Slice the cucumber lengthwise into thin slices.
5.
Cut the turkey or chicken into thin slices. Layer the tomato, arugula, cucumber and turkey on two of the bread slices. Drizzle with the remaining olive oil and season with salt and pepper. Top with remaining bread slices and serve.
