350 grams Puff pastry dough
1 bunch scallions
2 Tbsps Cress
4 Tbsps pickled Caper
2 stalks Leeks (whites)
salt
white peppers
2 cans Tuna (in its own juice)
1 Tbsp vegetable oil
2 garlic cloves
egg yolks (for brushing)
1 pinch Nutmeg

Preparation steps

Drain tuna and capers. Rinse scallions and leeks and cut into large strips. Peel and mince garlic. Heat oil in a pan and sauté garlic. Add spring onions and leeks and fry. Season with salt, pepper and nutmeg. Stir in capers and cress.

Spread puff pastry on a kitchen towel and cover with vegetable mixture.

Shred tuna with two forks and spread over vegetable mixture. Turn in the edges of the pastry and use the cloth to roll up tightly. Place on a baking sheet lined with parchment paper. Mix egg yolks with a bit of water and brush strudel with it. Bake strudel in an oven preheated to 200°C (approximately 390°F) for about 30 minutes. Remove, slice and serve.
