- 4 cups Romaine lettuce (washed and dried; torn into pieces)
- 1 large, ripe Tomato (sliced)
- 4 scallions (washed and sliced)
- ⅓ cup kalamata Olives (or black olives)
- 1 cup Feta (crumbled)
- 1 cup albacore, in spring water Tuna (drained)
- ½ cup good quality olive oil
- 2 Tbsps balsamic vinegar (or red wine vinegar)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

Combine lettuce, tomato, onions, olives, feta, and tuna in a bowl.

In a separate small bowl whisk together oil and vinegar. Drizzle over salad. Season with salt and pepper to taste. Toss gently to combine, keeping tuna in large chunks. Serve.
