- 350 grams Lasagne noodle
- 2 grams green, pickled peppers
- Asparagus
- salt
- freshly ground peppers
- 1 shallot
- 100 grams butter
- olive oil
- 150 milliliters dry white wine
- salt
- freshly ground Black pepper
- 50 grams aged, grated pecorino romano
- 50 grams grated Parmesan
- 2 Tbsps Truffle oil
- 50 grams fresh Truffle
Preparation steps

Peel the lower third of the asparagus. Trim the lower woody ends. Cut the asparagus into 2 cm (approximately 3/4 inch) long portions.

Pell the shallot and cut into slices. Heat the butter and 3 tablespoons olive oil in a large pan. Saute the asparagus and shallots. Deglaze with white wine. Season with salt and pepper and simmer for 2 minutes.

Cook the pasta sheets in plenty of boiling, salted water until al dente. Drain, coarsely chop and toss with the sauce. Stir in the truffle oil. Sprinkle with the grated cheese and freshly sliced truffle before serving.
