3 Tbsps Oil
6 cups Lamb shoulder (deboned and diced)
2 onions (peeled and chopped)
2 garlic cloves (peeled and chopped)
2 plantains
2 green Mangoes
½ mini Pineapple
¼ cup butter
½ cup plain Yogurt
3 Tbsps Curry powder

Preparation steps

1.
Heat the oil in a pan and add the meat. Cook briskly until golden-brown all over, then remove to a plate with a slotted spoon.

Add the chopped garlic and onions and cook for two minutes. Return the meat to the pan.
3.
Add the curry powder, and mix. Add 150 ml hot water and the yoghurt and stir well. Cover and cook gently for about 30 minutes, stirring regularly.
4.
Meanwhile, peel and chop the plantains into thick rounds. Peel and cut the mangoes into matchsticks. Peel and cut the pineapple into cubes.
5.
Heat the butter in a pan, add the plantain and pineapple. Cook over a gentle heat for a few minutes, then add the mango. Season.
6.
Serve the curry in small bowls with the cooked fruit alongside. Decorate with coriander.
