Preparation steps

Bring 125ml (approximately 1/2 cup) water, butter, 1 pinch of salt and sugar to a boil. Stir in the flour all at once and stir until the mixture forms a ball and leaves a residue on the bottom of the pan. Transfer to a bowl and gradually beat in the eggs with a wooden spoon until smooth and shiny.

Transfer to a piping bag fitted with a large star tip and pipe into a 7 cm (approximately 3 inch) ring onto a baking sheet lined with parchment paper. Bake in a preheated oven at 225°C (approximately 450°F) for 25 minutes. Let cool then cut in half horizontally. Peel the papaya, banana and orange.

Cut the papaya in half, remove the seeds, cut the flesh into pieces and sprinkle with lemon juice. Cut the banana and star fruit into pieces and toss with the fruit. Peel the orange with a knife and cut the flesh into segments. Toss with the fruit. Mix the quark with the powdered sugar. Beat the cream until stiff and fold in. Fill the ring with the filling, cover with the top and distribute the fruit in the center.
