- 250 grams Cauliflower
- 2 red Bell pepper
- 1 red onion
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- 400 grams Tortiglioni pasta
- 40 grams grated Parmesan
- mint (for garnish)

Preparation steps
1.
Rinse the cauliflower florets and cut into smaller pieces if necessary. Rinse the bell peppers, cut in half lengthwise, remove seeds and white ribs, and cut into small pieces. Peel the onion and cut into rings.

Heat the oil in a large skillet. Add the cauliflower, bell peppers and onions, and cook, stirring occasionally, until tender, about 8 minutes. Season with salt and pepper to taste.
3.
Cook the tortiglioni pasta in a pot of boiling salted water until al dente. Drain and toss with the vegetables. Serve garnished with the Parmesan and mint.
