- 1 small shallot
- 2 garlic cloves
- 7 Tbsps olive oil
- 50 grams whole Tomatoes (canned)
- 5 Tbsps Vegetable broth (to taste)
- 7 Tbsps white balsamic vinegar
- salt
- freshly ground peppers

Preparation steps
1.
Peel and finely dice the shallot and garlic. Heat 3 tablespoons of olive oil in a pan, and sauté both the garlic and shallot until translucent.
2.
Add the shallots and garlic to a large mixing bowl with the tomatoes and vegetable broth. Puree the mixture with an immeersion blender.
3.
Mix in the remaining olive oil and the balsamic vinegar. Season to taste with salt and pepper. If the dressing is too thick, you can thin it with a little vegetable broth or vinegar.
