Ingredients
- For the stew
- 1 kilogram Bell pepper (red, green, yellow)
- 600 grams Beefsteak tomato
- 150 grams onions
- 2 Tbsps olive oil
- 1 tsp ground paprika
- salt
- freshly ground peppers
- For the noodles
- salt
- 400 grams Pastry flour
- 4 eggs
- Nutmeg
- 200 milliliters milk
Preparation steps
For the stew: Cut peppers in half lengthwise, remove seeds and ribs. Rinse and cut into wide strips.
Blanch tomatoes, peel and core. Cut tomatoes into eighths. Peel onions, cut in half and slice.
In a wide pot, heat oil and sauté onions. Sprinkle in paprika. Add peppers and tomatoes, season with salt and pepper and cook over high heat for about 3 minutes, until a portion of the juice has evaporated. Cover, reduce heat to low nd simmer for 20 minutes. Season to taste.
For the noodles: Bring a large pot of salted water to a boil. Knead together flour, eggs, nutmeg, milk and salt in a bowl to quickly form a firm dough. Use hands to shape small noodles and cook in boiling water for a few minutes. The noodles are cooked when they float to the surface.
Remove noodles from pot, drain and add to tomato stew. Serve immediately.
