1 onion
1 kilogram Tomatoes
3 Tbsps olive oil
100 milliliters dry white wine
2 Tbsps Tomato paste
½ tsp sugar
salt
freshly ground peppers
100 grams Crème fraiche
½ tsp powdered sugar
2 generous pinches cocoa powder
1 generous pinch Piment d'Espelette
fresh oregano (for garnishing)

Preparation steps

1.

Peel onion and chop. Rinse and chop tomatoes. Heat olive oil in a saucepan, saute onion until soft. Add tomatoes, white wine and tomato paste. Season with sugar, salt and pepper. Simmer for about 20 minutes on low heat. Puree in a blender.

Whisk crème fraîche with powdered sugar, cocoa and chili pepper. Pour soup into bowls and top with dollops of seasoned creme fraiche. Garnish with oregano and serve.
