- 500 grams Beefsteak tomato
- 1 Red onion
- 1 Red chili pepper
- 1 cloves
- ½ tsp Mustard seed
- 2 allspice
- 1 pc Cinnamon stick (2-3 cm)

- 2 Tbsps balsamic vinegar
- 1 Tbsp brown sugar
- 2 Tbsps freshly chopped Basil
- 1 splash lemon juice

Preparation steps
1.
Blanch the tomatoes in boiling water. Remove the tomatoes from the water and peel. Remove the core and coarsely chop.

Peel and finely dice the onion. Rinse, trim, and finely dice the chile. Add the clove, mustard seeds, allspice berries, and cinnamon to a spice bag, then secure the bag with kitchen twine.

Add the tomatoes, onion, chile, 1 teaspoon of salt, vinegar, spice bag, and sugar to a pot and stir to combine. Bring to a boil, stirring constantly. Reduce the heat to low and simmer for 25 minutes, until thickened.
4.
Remove the spice bag from the pot. Add the basil, stir to combine, then season to taste with salt, pepper, and lemon juice.
5.
Fill the prepared jar to the brim with the chutney. Seal tightly and cool completely.
