1 Tbsp parsley (chopped)
1 Tbsp thyme (chopped)
150 grams cooked ham (sliced)
6 eggs
salt
freshly ground peppers
vegetable oil (for cooking)

Preparation steps

1.

Peel onions and cut into rings.

2.

Rinse and dry bell peppers, halve and remove seeds and ribs, cut into strips.

3.

Blanch tomatoes in boiling water for a few seconds, rinse in cold water and peel, quarter and remove seeds, dice. 

4.

Cut ham into strips.

5.

Heat 2 tablespoons of oil in a pan and saute onion rings, ham and peppers for about 5 minutes. Add tomatoes and saute briefly. 

6.

Beat eggs with herbs, salt and pepper, add to the pan and cook for a few minutes or until omelet thickens. Slide on a matching plate and return to the pan, other side down, and cook for another 3 minutes. 

7.

Cut into pieces and serve with baguette, if desired.
