1 garlic clove
2 Plum tomato
1 scoop Buffalo mozzarella (125 grams, approximately 4-1/2 ounces)
4 Tbsps olive oil
½ tsp dried Italian Fresh herbs
8 slices Baguette
coarse black salt
8 leaves Arugula

Preparation steps

1.

Peel garlic and cut in half. Rinse tomatoes, core and cut into thick slices. Drain mozzarella, cut in half and cut into eight pieces. Mix olive oil with herbs.

Brush bread on one side with a little oil and place on a hot grill for 1 to 2 minutes until crisp. Remove and rub with garlic. Return bread to grill with second side down, brush with oil and top with a slice of tomato. Sprinkle salt and add a piece of mozzarella. Grill 2 to 3 minutes more until cheese melts. Remove from grill and allow to cool briefly. Serve garnished with rinsed arugula leaves.
