16 whole Scallop (opened, grey edge and coral removed, flesh retained)
16 rashers Bacon
16 sprigs thyme (or cocktail sticks)
1 Tbsp olive oil
1 Tbsp butter

You can get the fishmonger to open the scallops for you. Alternatively you use frozen scallops which are available without the coral.

Preparation steps

1.
Season the scallop flesh with salt and ground black pepper.
2.
Wrap each one in a rasher of bacon and fasten with a sprig of thyme or a cocktail stick.
3.
Heat the oil and the butter in a large pan and fry the wrapped scallops for approx. 4 minutes on each side.
4.
Serve with a green salad and fresh white bread.
