- 250 grams dried, white Beans
- 200 milliliters dry white wine
- 300 milliliters Chicken broth
- 1 handful thyme
- 180 grams salted Bacon
- 4 Tbsps olive oil
- freshly ground peppers
- thyme (for garnishing)

Preparation steps

Soak white beans overnight in plenty of water. Next day, drain beans in a colander and rinse until water runs clear. Bring white wine and chicken broth to a boil and add beans. Cook, covered, for about 35-40 minutes on low heat. Stir occasionally and add a little water, if necessary.

Rinse and shake dry thyme, pluck off leaves. Chop bacon. Drain beans in a colander. Heat olive oil in a nonstick pan and lightly brown bacon. Add beans and thyme and mix well. Season with pepper and cook until beans have slightly browned. Place into bowls, garnish with thyme sprigs and serve.
