- 5 Tbsps white Vegetable fat (cooking)
- ⅓ cup caster sugar
- ½ egg (beaten)
- vanilla extract
- 1 ¼ cups self-rising flour
- ½ cup Raspberry jam (jelly)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Beat together the butter, vegetable fat and sugar in a mixing bowl until light and fluffy. Beat in the egg and vanilla until smooth.
3.
Stir in the flour to form a soft dough.
4.
Roll the dough into 20 small balls in your hands. Place well apart on the baking trays and bake for 15-20 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
5.
Sandwich the biscuits with the jam.
