2 Tbsps olive oil
150 grams brown sugar
2 Tbsps red Curry paste
250 milliliters Rice vinegar
50 milliliters soy sauce

Preparation steps

Rinse the tomatoes, remove the core, and coarsely chop. Peel and chop the onions. Peel and finely grate the ginger.

Heat the olive oil in a saucepan. Sauté the onions until softened. Add the tomatoes, ginger, sugar, curry paste, and rice wine vinegar. Bring to a boil, reduce the heat, and simmer 45 minutes over low heat. Puree with an immersion blender, add the soy sauce, and season to taste with sugar. Pass through a fine strainer, return to a boil, then pour into decorative bottles. Seal tightly and cool completely.
