- 4 Halibut fillet (175-225 g | 6-8 oz each)
- 1 Tbsp Oil
- 2 fresh lemons
- For the Marinade
- 4 cloves garlic cloves (chopped)
- 1 Tbsp freshly grated ginger (peeled and grated)
- 2 Tbsps fresh cilantro (minced)
- 3 Tbsps granulated sugar
- ¼ cup Nam pla (asian fish sauce)
- 3 Tbsps sesame oil
- 3 Tbsps Rice wine vinegar
- coarse salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

Rinse the fish under cold running water and pat dry with paper towels. Arrange the fish in a glass baking dish just large enough to hold them.

Using a mortar with a pestle, pound the garlic, ginger, cilantro and sugar until a paste forms. Work in the fish sauce, sesame oil, vinegar, salt and pepper. Spoon the marinade on both sides of the fish fillets. Cover the fish with plastic wrap and marinade in the refrigerator for 30 minutes, turning once.

Meanwhile, prepare the grill for direct grilling and preheat to high heat. When ready to cook brush the fillets lightly with oil. Place the fish on the hot grill grate and grill until each side is charred and cooked through, about 4 to 6 minutes per side. Drizzle lemon juice while fish is cooking.

Transfer to serving platter and serve immediately with lemon slices.
