- 1 onion (diced)
- 1 red pepper (seeds removed, diced)
- 1 green Bell pepper (seeds removed, diced)
- 8 eggs
- milk
- salt
- peppers

- 2 cups canned, Mexican Refried Bean
- water
- 4 Flour tortillas

Preparation steps
1.
Heat the oil in a frying pan, add the onion and peppers and cook stirring occasionally until softened. Set aside.
2.
Break the eggs into a pan and add the milk, salt and butter.
3.
Cook over a medium heat, whisking all the time, until the eggs are scrambled. Stir in the onion mixture.
4.
Meanwhile, heat the refried beans in a small pan with a little bit of water to thin them out.
5.
Spread a layer of refried beans down the center of each tortilla. Top with a quarter of the egg mixture, then fold over the edges of the tortillas and roll up.
