- 1 ⅔ cups all-purpose flour
- 2 tsps Baking powder
- 1 cup grated Cheese (e. g. Emmental)
- ½ tsp salt
- ¼ cup soft butter
- ¾ cup Yogurt
- 1 cup Red currant
- 2 sprigs rosemary (finely chopped)
- 4 sprigs thyme (finely chopped)
- all-purpose flour (for the work surface)
- 1 egg yolk

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
2.
Mix together the flour, baking powder, 40 g cheese, the salt, butter and enough yoghurt to create a smooth pastry. Only knead as long as necessary and quickly work in the redcurrants and herbs.

Roll out the pastry on a floured work surface approx. 2 cm thick and cut out 10-12 circles approx. 6 cm diameter. Place them on the prepared baking tray.
4.
Mix the egg yolk with 2 tbsp water and spread onto the scones. Sprinkle with the remaining cheese and bake for around 15 minutes until golden brown. Remove from the baking tray and leave to cool on a wire rack.
5.
Serve with cream cheese and redcurrants.
