Preparation steps

1.

Cook tagliatelle in boiling salted water until al dente, 8 to 10 minutes. Rinse in cold water and drain. Dip tomatoes in boiling water, then remove skins, cut into quarters, remove seeds and cut into small pieces.

Trim oyster mushrooms, remove stems and cut into strips. Core the chile peppers and cut into rings. Cut turkey into bite-sized pieces and sauté in hot butter for 3 minutes over high heat. Add oyster mushrooms and cook for another 3 minutes. Add tagliatelle, tomatoes and chile peppers and cook until heated through. Season with salt and pepper. Chop the herbs. Toss the pasta with the herbs before serving.
