- 500 grams Tagliatelle
- salt
- 80 grams parsley
- 40 grams almonds (blanched)
- 2 fresh garlic cloves
- 2 Tbsps Pumpkin seed oil
- 2 Tbsps Crème fraiche
- 60 milliliters olive oil
- 2 Tbsps freshly grated Parmesan
- freshly ground peppers
- 1 splash lemon juice
Preparation steps

Cook pasta in a pot of boiling salted water until al dente.

Rinse parsley, shake dry and pluck leaves from stems. Puree parsley in a blender with almonds, peeled garlic, pumpkin seed oil, crème fraîche and 3-4 tablespoons pasta water. Then add olive oil as needed, and possibly a little cooking water, to create a thick pesto. Add parmesan, mix and season with salt, pepper and lemon juice.

Drain pasta, mix with pesto and serve arranged on plates.
