- 800 grams lamb (shoulder)
- 2 onions
- 1 ½ centimeters fresh ginger
- 1 garlic clove
- 400 grams chickpeas (from a can)
- 1 whole Orange
- 2 Tbsps Ghee
- ½ tsp ground Turmeric
- ½ tsp ground Cumin
- 1 pinch ground cilantro
- 1 pinch ground cinnamon
- 400 grams diced Tomatoes (from a can)
- 150 milliliters Beef broth
- salt
- freshly ground peppers
- 2 Tbsps toasted Almond slivers
- parsley (for garnish)

Preparation steps

Rinse the meat, pat dry and cut into bite-sized pieces. Peel the onion, ginger and garlic and finely chop. Drain the chickpeas in a sieve. Peel the orange, remove all of the bitter white pith and cut the flesh into slices.

Brown the meat in hot ghee in a tagine. Add the onion, garlic, ginger and spices, sauté briefly and pour in the tomatoes. Add the broth and simmer, covered, for about 45 minutes over medium heat. Add the orange slices and chickpeas, stir and simmer 15 more minutes. Season with salt and pepper, sprinkle with almonds and serve garnished with parsley.
