Tacos Stuffed with Mozzarella

- 400 grams Mozzarella
- 1 onion
- 1 garlic clove
- 2 Tbsps balsamic vinegar White)
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 750 grams Tomatoes
- 1 Red chili pepper
- 2 Tbsps vegetable oil
- 250 milliliters Vegetable broth
- 1 pinch sugar (as desired)
- 8 Taco shells (finished product, about 12 cm diameter)
- 1 Iceberg lettuce
Preparation steps
Drain the mozzarella and cut into small cubes. Peel the onion and garlic and finely chop. Mix the onion and the mozzarella with the vinegar, season with salt and pepper and drizzle with olive oil. Blanch tomatoes, peel, seed and dice finely. Rinse the chile, remove seeds and add to the garlic. Heat the oil in a pan and sauté the garlic and the chile.
Stir together the tomatoes and the broth and let boil over medium heat until thickened. Season with salt and sugar to taste and leave to cool. Preheat the oven to 180°C (approximately 350°F) and freshen the taco shells briefly. Trim the lettuce, rinse, spin dry and cut into fine strips. Fill the tacos with mozzarella and lettuce, garnish with chile and garlic and serve the tomato sauce separately.
