- 8 Taco shells
- 2 carrots
- Red cabbage leaf
- 1 small white Daikon radish
- Lettuce
- shrimp (or crayfish meat)
- Coriander (for garnish)
- mint (for garnish)
- 1 Lime
- salt
- peppers
- brown sugar
- 2 Tbsps olive oil
- 1 small Cucumber

Preparation steps
1.
Rinse the cucumber, pat dry and cut off the ends. Then cut cucumber into 4 pieces, 5 cm (approximately 1 3/4 inches) wide, and scoop out each piece in the middle; thereby leaving a bottom. Cut the top of the cucumber pieces in a pinking pattern.

Squeeze juice from the lime. Combine lime juice, salt, sugar, pepper and olive oil and mix well into a marinade and pour into cucumber dishes.

Peel carrots and radish. Cut both into thin slices and then into thin strips (julienne). Rinse salad and red cabbage leaves, shake dry and also cut into strips.
4.
Arrange carrot, radish, salad and red cabbage strips in the taco shells and top with shrimp or crayfish meat. In addition, place cucumber dish on plates and serve garnished with coriander and mint.
