- 1 Red onion
- 3 garlic cloves
- 250 grams Cherry tomatoes
- 2 sprigs Basil
- 2 sprigs oregano
- 4 Swordfish fillet about 220 g (approximately 8 ounces)
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 150 milliliters dry white wine
- 1 Tbsp Caper

Preparation steps

Peel and finely chop the onion and garlic. Rinse and halve the cherry tomatoes. Rinse the herbs, pat dry, remove the leaves and finely chop.

Rinse the swordfish, pat dry, season with salt and pepper. Heat the olive oil in a large pan and sear the swordfish on both sides. Remove from the pan and add the onion and garlic. Sauté for 1-2 minutes, until softened. Deglaze with the white wine, stir in the tomatoes and simmer for 5 minutes. Return the swordfish to the pan and add the chopped herbs. Simmer on low for 5 minutes. To serve, plate the fish and spoon the tomato sauce on top.
