- 400 grams Sweet potato (cooked)
- 600 grams Sausage
- 150 grams Smoked bacon (sliced)
- 2 Tbsps vegetable oil
- salt
- freshly ground peppers
- 2 sprigs thyme

Preparation steps
1.
Preheat oven to 200°C (approximately 400°F) convection.

Rinse, trim and halve fennel. Slice fennel into thin strips. Cut sweet potatoes into bite-sized pieces. Wrap each sausage with a slice of bacon and place on an oiled baking sheet. Place fennel and sweet potatoes alongside and season with salt and pepper. Drizzle with oil. Bake until bacon is golden-brown, about 20 minutes.
3.
Remove from oven and serve sprinkled with fresh thyme leaves.
4.
Serve with bread if desired.
