1 cup Arborio rice
4 cups milk
1 pinch salt
¾ cup sugar
3 large eggs
1 tsp vanilla extract
1 unwaxed lemon (finely grated zest)
3 Tbsps lemon juice
To decorate

Preparation steps

1.
Combine the rice, milk, salt and 110g|1/2 cup sugar in a large pan. Bring to a boil, stirring, then reduce the heat and simmer for 15-20 minutes, stirring occasionally, until the rice is tender and the milk is almost absorbed.

Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a large baking dish.

Whisk the eggs and remaining sugar until thick and pale. Add the vanilla, lemon zest and juice and mix well.
4.
Stir in the rice mixture. and spoon into the dish, smoothing the top.
5.
Bake for 25-30 minutes until deep golden and the centre is firm to the touch. Cool in the dish.
6.
Sift icing sugar over the top and decorate with lemon rind.
