Prepare the starter by placing the pinch of yeast in a mixing bowl. Pour over the water and stir to dissolve. Add the flour and mix until thoroughly combined.
Cover and allow to stand for 60 minutes at room temperature.
Prepare the final dough by mixing together the starter dough, flour, sugar, salt and yeast until you have a rough dough.
Gradually all the olive oil and orange flower water to the dough, incorporating it as you do.
Knead for 10-12 minutes until you have a smooth, elastic dough; the dough will be quite wet to begin with because of the olive oil.
Shape into a rough circle shape. Leave to prove at room temperature for 2-3 hours.
After proving, preheat the oven to 200°C | 400F | gas 6. Line a baking tray with parchment paper.
Roll the dough out to roughly a 30 cm | 12" circle. Cut a few slits in the dough to create holes; stretch them out a little with your fingers.
Bake for 15-20 minutes until golden all over. Remove and allow to cool on a wire rack before garnishing with edible gold balls and serving.
