- ⅔ cup plain Yogurt
- ⅔ cup caster sugar
- 2 eggs
- 1 ⅔ cups plain flour (sifted)
- 1 ½ tsps Baking powder
- ½ tsp baking soda
- 1 pinch salt
- ⅔ cup white chocolate (roughly chopped, plus 50 g extra)
- ⅜ cup vegetable oil
Preparation steps
1.
Pre-heat the oven to 180°C | 350F | gas 4. Line and grease a 9 inch x 5 inch loaf tin with parchment paper.

In a mixing bowl, whisk together the yoghurt, sugar, eggs and oil.

In another mixing bowl, combine the flour, baking powder, bicarbonate of soda and salt.

Place 100g of the chocolate in a small heatproof bowl and sit over a pan of barely simmering water, making sure that the bottom of the bowl doesn't touch the water. Whisk gently making sure that the chocolate is smooth.

Once the chocolate has melted, allow it to cool for 5 minutes before folding into the rest of the batter. Fold in the remaining 50g of chopped white chocolate.

Scoop into the lined loaf tin and bake in the oven for 45 minutes, or until it feels springy to the touch on top.
7.
Remove from the oven and allow the tin to cool on a wire rack before turning out and serving.
